The earliest documentation of the harvest celebrations in the Americas were from the Spanish explorers with Timucuans (Native Americans) in what is now Florida. Most likely the earliest was from Native American's even before that. A holiday turned non/religious just like many others.

All country's have their harvest feast celebrations, have fun figuring out what one was really the first anywhere.
