This leaves the rest of your money for OS ect. Your motherboard has integrated IPMI so no GPU ect is needed as it can be controlled remotely via lan/internet. You might need to swap one in there to configure shit but I am not sure as I have never personally worked with real server level gear.
All of the above meets and or exceeds the recommend requirements for your minecraft servers on a hardware level. These parts also represent the highest quality to ensure continuous operation. You may wish to spend some of the extra money on upgraded fans or cpu HT or even a small WC system for silent 24/7 operation.
