chop is just quickly chopping stuff. you chop w/ a knife a few times, reducing to approx. pieces 1/16th the original. dice is chopping the chopped stuff, bringing you to approx. 1/32nd the original. mince is basically getting a mortar and pestle and grinding ingridient into a fine powder, taking a razer and making a line...

You can mince with a knife...and it's not powder. It's just very fine. For example:
